Homemade Cashew Milk & Vegan Chia Seed Cookies

One of my favorite things to do is re-create luxury healthy staples at home.  I love creamy nut milk and natural desserts that don’t leave me feeling foggy and bloated. Have you ever gone shopping and have a treat yourself moment just to buy a “healthy” snack to find out the 8 dollar bag is half filled with air and loaded with hidden processed sugars? Or maybe you came to find your stomach was feeling a little off from the random gums and additives in your favorite almond milk. My goal is to make feeling and eating healthy simple and fun. These milk and cookies are nutrient dense, food for the mood and delisshh.

I decided to make adaptogenic nut milk: vanilla cashew milk and chocolate collagen cashew milk both infused with ashwagandha and holy basil.

  • I love making cashew milk because it’s super easy with no straining and takes just a few minutes to make. This time around, I added some adaptogens to add a soothing and calming vibe.

Cashew Milk


  • 1 cups of raw cashews 

  • 4 cups of water 

  • 2 dates 

  • 1 tbsp Cinnamon 

  • Dash of sea salt 

  • Optional ashwagandha & holy basil 1-2 servings from tincture 


  • Soak cashews and dates for 4 hours or overnight (just cover with water) 

  • Drain water and rinse cashews and dates 

  • Place in a blender and add 4 cups of water, adaptogens, cinnamon, dash of salt and blend

    • If you have a smaller bullet just halve the recipe and blend in two batches

  • For chocolate collagen cashew milk follow the same recipe and add the following before blending: 

    • Scoop of collagen 

    • 2 tbsp of raw cacao 

Vegan Chia Seed Cookies 


  • ½ cup Almond flour

  • ⅓ cup Oat Flour 

  • ½ cup creamy nut butter ( I like Cashew or Almond) 

  • ¼ cup maple syrup

  • 2 tbsp raw honey 

  • 2 tbsp melted coconut oil 

  • ¼ cup chia seeds

  • ¼ cup hemp seeds 

  • 1 tbsp of baking soda


  • Mix all the ingredients together in a large bowl 

  • Roll into two inch balls

  • Place and press down on baking sheet lined with parchment paper

  • Cook for 10-12 minutes 

  • ENJOY!

Makes 4-6 servings
