Beet Hummus

May 25, 2020

On top of being aesthetically pleasing AF this little side is versatile and so easy to make.  After reading Medical Medium’s book on liver cleansing I try to incorporate liver loving foods whenever possible.   Our liver is responsible for SO MUCH. It’s where we store stress and anger, the liver allows our body to detox.  Think holding on versus letting go, both mentally and physically.  Beets are not only wonderful for the liver, they are full of antioxidants and heart healing.  The list goes on.

A few ways to enjoy this lil snack:

  • Spread on toast with some avocado

  • Dip your fave crackers or carrot sticks

  • Add  on the side of your next grain, breakfast or salad bowl.

  • 1 cup of garbanzo beans

  • ⅓ cup of EVOO

  • 1/2 beet

  • Garlic powder, sea salt and pepper to taste

  • BONUS: everything but the bagel seasoning

  • Peel beet and boil for 15 minutes to get somewhat soft

  • Blend all ingredients in blender/ bullet

  • Sprinkle some everything but the bagel seasoning on top

  • Refrigerate for 30 minutes

  • ENJOY!
